Heres a quick recipe for Avocado Toast with Sautéed Mushrooms and Peppers.
To Serve Two:
1 Hass Avocado
Chopped Red Onions
Squeeze of Lime
Pink Himalayan Sea Salt
Coarse Ground Black Pepper
Mash Avocado to desired texture.
If it’s too much to mash or you like a creamy spread,
you can do it in a Bullet or food processor.
Add in All ingredients and mix in Seasoning to taste.
When finished Place your mashed avocado in fridge to keep cool.
One Pack of Organic Baby Bella Mushrooms Cleansed and Sliced.
Red Onion sliced
Red Pepper sliced
Mixed Cherry Tomato or regular cherry tomatoes halved
Chopped Garlic as finely as possible
In a medium/ large sized pan pour some Olive oil for cooking and let it heat up over medium high heat.
Once hot add the mushrooms. We want COOK THEM DOWN. And we want this to caramelize so keep an eye on it and keep the heat med-high.
In about 3 mins of cooking add the onions red pepper and tomato. Continue to cook down.
After 5 mins
Add the following seasoning (or whatever you might like)
A Dash of Curry
And a bit of Rosemary
I eyeball everything so please taste your food while cooking.
Lastly if you have, a dash of liquid smoke. (This is a Godsend when you do not eat meat but want that Smokey flavor)
Cook all the way down.
The water that was in the pan should have evaporated by now.
And your mushrooms should be nice and caramelized.
Remove From heat.
Honestly it can go on any thing you like but something about a toasted everything bagel makes this meal so savory. TRUST ME. Or sourdough Rye bread. Yummy!
Toast bagel in oven with butter (in my case vegan butter) when done,
Spread on the avocado
Top with your mushrooms
Garnish with cilantro and a squeeze of lime.
Voila, you just made an epic Avocado Toast!
